This is one of my favorites.

5 pounds of boneless pork.

2 cans chicken broth

2 Tablespoons fresh garlic

1 onion

salt, pepper

10-12 fresh roasted New Mexico green chilis

Place pork in big stock pot. I usually cut it into hunks so it will cook faster. Put in the chicken broth and chopped onion and finish covering the meat with water. Cook on medium until the begins to get tender. Add garlic, salt pepper (to taste), and chopped chilis without the roasted skin. Finish cooking until meat shreds. You want to cook most of the broth off if you want to eat it in tacos or add extra broth if you want to eat like green chili stew. You can do anything with this. Add a can of chunk pineapple for a little sweeter. You can add a conof hominy for the stew. My wife's favorite is the tacos. be careful if your peppers are really hot.

Sounds good Doc. I wish I had me one of those green chile burritos from Buena Vista right now.
